Porcupine Meatballs (Italian Beef Meatballs with Rice)

Nope, no bits of real porcupine in this one.  Just a good ole-fashioned Italian meatball recipe with the inclusion of rice – imagine the filling for stuffed peppers as a standalone dish.  That’s the goodness that is this porcupine free recipe.

This one holds a very special place in my heart as it is, on record, my first memory of ever cooking anything by myself.  As a means of breaking me into the long line of great female cooks in our family, my grandmother and mother purchased me a cookbook for kids when I was 9 or 10.  I remember pouring through the pages, wanting to be a part of the group of kids in the test kitchen pictured creating and devouring the many recipes.  I particularly like the cooked dishes – the idea that I could be responsible for more than a PBJ cut with a cookie-cutter was exhilarating.  One of the recipes, called “Porcupine Meatballs” was particularly interesting to me and seemingly edible for the family, so my mom said that it’d be a good one to start with. Swiss Chard Dolmades

Recently, my good friend Joey (owner of Maple Ave Restaurant in Virginia – if you haven’t eaten there yet and are near by, shut down your computer and go right now.  Or at least bring this with you on a laptop and get someone to drive you there) posed the question on her Facebook page “What’s your favorite Fall vegetable?”  I was completely in line with people’s responses of pumpkin and squash.  I even gave a silent nod, though no one mentioned it, to artichokes (oft thought of as a Spring veggie, artichokes actually love the cold).  But my answer, which came with not a moment’s hesitation, was swiss chard.

These noble leaves are the kings of greenery in my book – tender yet hearty, and full of earthy flavor that so much more refined than spinach.  Members of the beet family, the stalks vary in shade from paperwhite to golden and garnet (just as you’d see of beets in the market).  While I typically love my chard sautéed simply with olive oil and garlic, or luxuriously bathed in locatelli, cream and melted shallots, the leaves are so versatile, you can work them into pretty unique formats.  This recipe not only showcases the greens, but also leverages their quick cooking time.  Typical dolmades, or stuffed grape leaves, involve a lot of soaking and braising of the leaves to coax them into tenderness.  Swiss chard needs no such thing – just a quick dip in some boiling hot water to make them pliant, and a short cooking time of a mere half an hour.  Something to think about during the week when extra time is at a premium (“What? The Office is about to start?  Let me hurry up and finish cooking already…”)

These dolmades are made with ground lamb and rice, but feel free to replace the lamb with beef for simplicity, or leave the meat out entirely and make a batch with just rice and herbs.    I top the leaves with an Avoglomeno sauce that’s adapted from Greek queen of chefs, Cat Cora.  It’s a luscious blend of eggs, lemon and dill and is equally devourable hot or cold, and just elevated the dolmades to a whole ‘nother level.

Recipe for

Swiss Chard Dolmades

1 bunch of swiss chard leaves (about 12-15 individual stalks)
1 lb. of ground lamb
1 c. of instant rice
1 tbs. of dried mint (can use fresh)
1 c. of onion, finely minced
1/4 tsp. of white pepper
1/8 tsp. of black pepper
1/2 tsp. of salt
1 tsp of olive oil
1 can of chicken broth

4 large eggs
juice of 2 lemons
1/2 tsp. of pepper
1 tsp of dill
scant pinch of salt

Set a large pot of well-salted water to a boil.  While that is coming up to temperature, make your filling.

In a large bowl with your hands (or gently with a stand mixer) mix the beef, onion, mint, rice, pepper, salt and olive oil.  Make sure to combine all ingredients but not overmix.  Set aside.

Prepare your swiss chard leaves by cutting out the fibrous middle stem while keeping the rest of the leaf intact.  Set aside.  Once your water is boiling, take the leaves, one at a time, and plunk them into the boiling water for 1-2 seconds and then remove them to a plate.  Since we are not shocking them with a cold water bath after removing them from the hot water, the leaves will continue to cook a bit as they cool.  This is perfect for getting them pliant.  After you’ve cooked all of the leaves, set up a station where you can roll the dolmades.  On a clean cutting board, place a leaf flatly on the surface and add a heaping tablespoon of meat filling.  Fold the two sides of the leaf in over the filling and roll the whole thing up like the world’s smallest burrito.  Place the stuffed chard in a 13x9x2 pan, seam side down.  Repeat with remaining leaves until you run out of filling.

Pour a can of chicken broth over the leaves and cover with foil.  Bake for 25-30 minutes, until the leaves are tender and half of the stock has been absorbed.  Remove from the oven and let sit.

In a mixing bowl with egg beaters or a stand mixer, beat the eggs, lemon juice, salt, pepper and dill until frothy and pale golden.  Continuing to beat the mixture the whole time, carefully pour in the remaining chicken broth from the pan of dolmades.  Make sure to do this slowly, or you’ll have lemon flavored scrambled eggs instead of a smooth sauce.  Once it is all incorporated, pour the mixture into a sauce pan and turn the heat to medium.  Continue to whisk the sauce until it thickens enough to  coat the back of the spoon.  Pour sauce over your dolmades.

Serve them immediately as a hot dish, or let rest to room temperature or even cool as a variation.  These little guys are good every which way.

Albondigas (Spanish Meatballs)

If good Sicilians love the joys of a meatball, then it’s no surprise that good cooking Sicilians know how to whip one up with class.  Consider me a fan, nay a fanatic, of the meatball.  So much so that I love them in all shapes and forms, from the Vietnamese variety as delicious Bo Vien in a steaming bowl of pho, to this recipe for piquant albondigas, Spanish meatballs flavored with paprika and cooked in a red pepper and sherry sauce.  For you red sauce fanatics out there, this one is a lovely change of pace.

Albondigas are often found as part of tapas, a collection of small plates of both hot and cold nibbles hailing from Spain.  These are served in sauce in a small clay dish with nary a bit of pasta or rice as accompaniment.  As such, you’ll probably want to get a good-quality, crusty loaf of bread to use to sop up this absolutely delicious sauce.  Throw in a dish of garlicky olives, manchego cheese, marinated mushrooms, and manchego cheese for a simple Spanish spread.  Or make a few other cooked tapas, like a Tortilla Española (a simple Egg and Potato omlette) or Pollo al Ajillo (chicken sauteed with garlic and sherry), and feast like a champion matador minus the unnecessary bull-slaying.  Olé!

The real trick to these guys, as with most meatballs, is to sear them very well before plunking them into your sauce of choice for slow-cooking.  Doing this allows the meatballs to keep their shape, seal in the juices, and allow them to become meltingly tender after cooking.  You want them dark brown before adding to the sauce to keep things awesome.  And for you, I want nothing less than awesome.

Recipe for

Albondigas (Spanish Meatballs)

Ingredients
1 lb. of ground pork
1 lb. of ground beef
3 cl. of garlic, minced
3 tbs. of chopped flat-leaf parsley, finely chopped
1 tbs. of fresh oregano, chopped
1/4 tsp. of paprika
1/4 tsp. of black pepper
2 tsp. of salt
1/4 of a large onion, finely chopped
1/4 c. of bread crumbs
1 egg
1 tsp. of worchestershire sauce
2 tbs. of olive oil

24 oz. jar of piquillo peppers, drained (can use roasted reds instead)
1 16.5 oz. can of stewed tomatoes
2 tbs. of olive oil
1 tbs. of sherry
salt and pepper

1/2. c. of chicken broth
1/2 c. of dry white wine

Preheat the oven to 400°.

Add pork, beef, garlic, parsley, oregano, pepper, salt, onion and worchestershire sauce to a large bowl and mix well.  Mix in egg and bread crumbs and set aside.  Wash hands well and then wet them thoroughly.  Scoop out about 2-3 heaping tablespoons into your hand and roll into a ball.  Place on a plate and continue to roll meatballs.

To a food processor or blender, add the piquillo peppers, the tomatoes with juice,two tbs. of olive oil and the sherry.  Pulse until smooth.  Taste for salt and pepper and season accordingly.  Pour mixture into a dutch oven and put over medium-low heat to simmer.

Heat the remaining 2 tbs. of olive oil in a skillet.  In batches, brown the meatballs on all sides, making sure to sear them well.  As they finish, add them to the piquillo pepper sauce.  When all meatballs are browned an the skillet is still hot, carefully add the white wine to the pan.  As the wine reduces, scrape up the browned bits on the bottom of the pan.  Add the chicken broth and continue to reduce by half.  Pour liquid into the pot with the piquillo sauce and meatballs.  Cover dutch oven and place into the oven.  Bake for 40 minutes, checking after a half an hour to make sure that the sauce hasn’t thickened too much.  If it looks as if there is no liquid left, add a 1/2 c. of water, recover and cook for the last 15 minutes.

To serve, remove albondigas to a dish and top with the piquillo pepper sauce.  Sprinkle with chopped parsley and serve.

Braised Short Rib and Crimini Ragu with Pappardelle

Good things come to those who wait, and baby, these marbled short ribs in a meltingly rich ragu are worth it.  This recipe came about as an alternative to my dream lunch (yep, you read correctly when I said lunch) back when I was studying photography in Italy.  Our class lived in a sleepy town called Orvieto, nestled about 2 hours between Rome and Florence.  In the heart of Tuscany, Orvieto’s culinary acclaim was rooted in black truffles, a crisp white wine called Orvieto Classico, and wild boar.  The latter was an absolute mind-blower for me – in this country, pork has been raised to be so very lean, it’s been genetically altered into flavorlessness.  People then swoon over Berkshire pork anything because they are harkening this atavistic longing for a time when pork tasted flavorful and rich.  Not the dry, chewy garbage that we see all the time.

 

My first taste of wild boar was a forkful off my friend Michelle’s plate – she had a hankering for pappardelle, whilst I had never even heard of it until then.  The wide, eggy noodles, like halved lasagna sheets without the crinkles, weren’t as widely available in the states yet.  To me, at the time, they were a revelation, and when I eat them now (either made from scratch or picked up at Trader Joe’s), I look back to that first taste with fondness.  Topping the tangle of noodles was a luscious ragu of wild boar (called “cinghiale” in Italian) – savory, sweet and robust, this was like no pork that we had back home.  I was in love.

Braised Short Rib and Crimini Ragu with Pappardelle © Spice or Die

Although, as I mentioned before, pappardelle is an easy score, the wild boar is none to be found.  Though the ragu can easily me made with thick cut loin chops or even pork shoulder, I change the protein to beef and lovingly braise short ribs in stock, veggies and spices.  It takes time, but is really no work at all – one of those “set it and forget it moments”…sorry Ron Popeil.  This is better than anything made in your rotisserie grill.

Braised Short Rib and Crimini Ragu with Pappardelle

3 tbs. of olive oil
2 lbs of short ribs
1 tsp. of black pepper
2 tsp. of kosher salt
1 lb. of cremini mushrooms
2 bay leaves
1 stalk of celery, diced
1 carrot, diced
2 cloves of garlic, chopped
1 small onion, diced
1 c. of red wine
2 tbs. of thyme, chopped
28 oz. of tomatoes
4 c. of beef stock
6 c. of water
1 can of tomato paste
2 tbs. of butter
2 tbs. of flour

1 lbs. of dried pappardelle (or your favorite long pasta)
3 tbs. of butter
3 cl. of garlic, chopped
2 tbs. of fresh thyme leaves, chopped
1 tsp. of crushed red pepper

In a large dutch oven, heat the oil.  Cut your short ribs into meaty, one-inch cubes and liberally salt and pepper.  Fry in batches in the dutch oven until very well browned on all sides.  Remove with a slotted spoon and set aside.

Add the 1 tbs. of oil to the pan and add the mushrooms, making sure not to crowd the pan too much.  Stir infrequently, allowing mushrooms to brown and show lovely color.  Remove with the slotted spoon and add to the beef cubes.

Add your carrots, celery and onion to the dutch oven.  Cook until translucent and then add the garlic.  Continue cooking until fragrant – about a minute.  Pour in the cup of wine to deglaze the pan,  scraping up any browned bits on the bottom of the dutch oven.  Add your tomatoes and stock to the pot and stir.

Simmer for 2 1/2 hours, adding water in 2 cup increments every 45 minutes.  When the short ribs are fall-apart tender and the sauce has reduced for the last time, use a slotted spoon to remove the meat from the pot.  In a separate sauce pot, melt your butter and then whisk in your flour.  Cook for a minute and then whisk in the tomato paste.  Pour all of the stew liquid into the pot with the tomato-butter-flour roux, whisking the entire time to prevent lumps.  Your sauce should be shimmering and creamy at this point.  Return the meat to the sauce, mashing it a bit to allow it to fall apart in the sauce.

Bring a large pot of salted water to a boil and drop in your pappardelle.  Cook until al dente and then drain, making sure to reserve a cup of the cooking liquid.

While the pasta is cooking, in another small saucepan, melt the three tablespoons of butter.  Add the garlic, thyme and red pepper at the very last minute, allowing it to barely cook in the hot butter.

When the pasta is done, take out a skillet (lots of pans, I know) and turn it on high.  Plunk in 1 tablespoon of the butter-garlic mixture, the pappardelle and two ladlefuls of the sauce from the ragu.  Add the cooking water as necessary to loosen up the sauce until the pasta is glossy and the sauce adheres to the noodles.

To serve, place a tangle of pappardelle in a bowl and top with a few large spoonfuls of ragu, making sure to get good amounts of short ribs and crimini on the plate.  Drizzle a little of the garlic butter on the top and mangia bene!

Grilled Lemongrass Beef

A Sweet and Salty Affair

From chocolate covered pretzels to a salt-rimmed margarita, our palettes all crave the goodness that is sweet and salty.  This recipe tackles all the taste points, with a fair share of sweet, salty and tart.  I slather this simple marinade on beef and grill until charred on the outside and juicy pink on the inside, but you can certainly use it on pork or chicken as well.  It’s comprised of a simple kalbi sauce (a delicious combo of brown sugar, soy and mirin used in Korean BBQ), a splash of toasted sesame oil, and an aromatic bit of ground lemongrass (which can be found at Asian markets or online).  I’ve given you the lazy version below that uses a pack of Noh Korean Barbecue mix – I score the packets on Amazon along with orders of char su, the lovely crimson Chinese marinade used on roasted pork.  If you want to go homemade, though, you can certainly make it from scratch using some soy sauce, mirin, sesame oil, sugar and salt and pepper.  Garnish with white and black sesame seeds for an added bit of lovely. Simple Hanger Steak

Hanger? I Hardly Knew Her!

Face it, kids.  Filet mignon is overrated.  Yes, it’s tender.  Yes, it costs more than most other steaks.  But really, if you ask me for the cut that I turn to time and time again for an in-home, steakhouse experience, it’s all about the hanger steak.  Centered between the other popular cuts of brisket and flank.  It’s sometimes referred to as skirt, even though it’s actually a completely separate cut of meat (though close by).  If you see “onglet” on a French bistro menu, they are referring to hanger steak.  The steak itself is comprised of two long strips of meat, with an inedible white membrane running down the middle.  I’m usually too lazy to cut this out when I cook the steak at home, but if you want to be a fancy pants, trim this out before you cut portions of steak.

Prized for it’s beefy flavor and chewy goodness (read: chewy but not at all tough), it’s referred to as “the butcher’s cut” because it was the steak that the butcher kept for his fam.  I’m not so sure that this is the case these days, but because of its caché, it’s been marked up in price from time to time.  Funny how the cheaper cuts (short ribs, skirt steak) have suddenly gone up in price once people collectively “discover” how good they are. I have so many happy memories of this cabbage borscht with beef short ribs – it’s one that my Dad has been making for years, probably back when the parents had a subscription to Bon Apetit and Gourmet mag.  Every edition had sweet 70s fashions and folks curled up on shag rugs dipping wisps of beef tenderloin into the smoking oil fondue pots.  You can’t really find this soup recipe by its original name (which I use here), but recently my Dad did a search and found out that it now goes under the guise of Czech Flanken and Cabbage Soup.  Both titles are accurate, but the recipe below is truly the best I’ve come across.  The soup is hearty and rich, but cut with a zip of lemon and sweet red wine. Cincinnati Style Chili Mac

aka The Championship Chili

The zesty cousin of red-hot Texas chili, this Cincinnati style chili mac has a whole lot of soul in the form of a long line of herbs and spices.  Originally perfected by Greek immigrants, this slow-cooked, saucy treat is known for its long list of seemingly unusual ingredients.  In addition, the chili is traditionally served without beans and over spaghetti – you’ll see when you make this chili that it actually cooks up like a bolognese.

I first became familiar with it via the DC restaurant, Hard Times Cafe, where the chili is served in “ways”.  Starting with your basic chili, each additional topping is considered a way – so two-way is spaghetti and chili, three-way is spaghetti, chili and cheese, four-way is spaghetti, chili, cheese and onions, and five-way is all of the above plus pink beans. Classic Meatloaf

“Pass the Southern Comfort, baby.  It’s been a long day.”

And by that I mean spend some time getting a little déclassé and whip up some potatoes and veg for this super light and moist meatloaf.  I know, I know.  You want elegance and style.  You want strings and harps, and saucers of champagne.  But occasionally, you have to trailer-park-trash it up a bit and enjoy some straight up comfort food.  I know what you are thinking – Angela, aren’t you the self-proclaimed ingredient snob?  Truthfully, my deal is that everything be as tasty as possible, which is absolutely not elitist.  There’s room for truffles and tater tots alike in my mind.  Though maybe not in the same dish.  Anyways, the whole point is to put aside your preconceived TV dinner notions and tuck into Mama Angelina’s Bomb Meatloaf…yes, that’s literally what it’s called.
