Instant Potato Gnocchi with Prosciutto, Peas and Chanterelle Mushrooms

When I first learned about The Daring Kitchen, I was excited to join a group that would provide me with monthly culinary inspiration. This month’s assignment (and my very first with TDK) was created by Steph from Stephfood, our Daring Cooks’ July hostess. Steph challenged us to make homemade noodles without the help of a motorized pasta machine. She provided us with recipes for Spätzle and Fresh Egg Pasta as well as a few delicious sauces to pair our noodles with! Shortcuts in the kitchen vary rarely lead to splendid results.  Garbage in, garbage out, and no glory in between.  It was with this sentiment and a whole lot of skepticism  that I approached the idea of a pillowy, toothsome gnocchi made of instant potatoes.  How could that be?

Given that this recipe was to become a part of a cluster of gnocchi recipe all undertaken together for The Daring Kitchen, I decided to approach the recipe as just that – a dare.  How could I turn fake-me-out mashed potatoes into gourmet glory.  The base recipe was fairly simple, reconstituting the dried flakes and then adding the traditional gnocchi add-ins of flour and egg.  I then swaped out the boiling water for the soaking liquid from some dried chanterelle mushroom, adding a gloriously nutty flavor to plain old potato dumplings.  I then dressed the little treasures in one of my favorite sauces of prosciutto, peas and cream.  Perfection! I know some folks might be surprised by this claim, but the majority of limoncello offerings here in the states are straight rocket fuel.  Sure, the lovely bright taste of lemon is first and foremost on the palette, but most immediately smack you in the face shortly thereafter with bitterness and pure, unmellowed alcohol.  My very first trip to Italy included a tour of Sorrento, the dreamy southern town known for their luscious lemons coaxed into deliciously smooth limoncello.  And yet, the gorgeous lemon liqueur doesn’t really seem to be available here other than a whole lot of fully-loaded (to the point of noxious) imposter cousins. Of the many meals that I’ve eaten in my life time, only two do I consider truly transcendental. One of which, a dinner served al fresco on the cobblestone streets of Orvieto, was at a little haunt called L’Asino D’oro (Italian for “The Golden Ass”). We had decided to go, a group of us, on the cryptic recommendation of one of our professors, “It’s the most amazing meal of your life. Oh, and if they have the stinco, order it. I don’t know what stinco means, but it’s incredible.” A table was set right in front of the restaurant that looked more townhouse than dining space. Apparently, only two or three parties could dine each evening, and the process of making a “reservation” was literally informing the owner that you would be popping by. In a clammour of conversations in rapid-fire english and broken italian, it was accidentally (or maybe it was intentionally) relayed to the owner to bring us one of everything on the menu. Plate after plate of deliciousness, from fat little sardines dressed in tomato sauce to marbled platters of salumi to heaping mounds of toothsome fresh cut pastas, graced the table as we barely kept up.

One dish in particular gave me pause as for the life of me, I could not figure out the angle.  Gorgeous purple noodles were topped with a savory braised stew of sorts.  I peeked at the menu and saw that it was Tagliatelle all’Ubriaco con Ragu di Coda de Bue.  What the…?  I asked one of the guys on the trip who spoke fuent italian for a little translation help, to which he proffered, “It’s some kind of tail.”  Wait, wha?

I came home and did a little research – coda de bue was oxtail and the sauce was a ragu di carne bianche, or a tomato-less ragu.  In addition, the boozy pasta was purple from a bath in red wine as opposed to the traditional salt water jacuzzi.  What a revelation!  Between the absence of tomato in the ragu and the wacky purple pasta, I knew I had to take this dish on for myself.

Because oxtails need a lot of love and time to become tender, I like to make this sauce in the pressure cooker.  In addition, they tend to be fatty, so try to make the sauce the night before you serve it for simpler deglazing.  As for the pasta, the more that it cooks, the more purple it becomes.  Try fresh or dried pastas with different cooking times to see an array of lovely crimson shades.  And above all, make this meal for folks in need of a little wonder in their lives – from start to finish, this dish is really something magical.

Recipe for

Drunken Pasta with Blond Oxtail Ragu

Ingredients
3 lbs. of oxtails
3 oz. of pancetta
1 onion, minced
4 cloves of garlic, minced
3 carrot, finely chopped
3 stalks of celery, finely chopped
3 parsnips, finely chopped
2 tbs. of olive oil
1 c. of dry white wine
6 c. of beef stock
3 sprigs of fresh thyme, leaves removed
2 fresh bay leaves
kosher salt and black pepper to taste

2 bottles of red wine
2-3 tbs. of chopped parsley
2 tbs. of butter

Add two tablespoons of olive oil to a pressure cooker and heat on high.  Salt and pepper the oxtails and sear on all sides in the olive oil.  Remove and set aside.  Add the onions and pancetta to the pot and cook until onions are translucent.  Add the garlic, carrots, celery and parsnips and cook until fragrant.  Add the wine and cook until alcohol cooks off.  Add the beef stock, thyme and bay leaves and put on the pressure cooker lid.  Cook on high pressure for one hour.  Turn off the heat and let the pressure drop naturally.  Using a pair of tongs, remove all the oxtails and put in a plastic tupperware.  Drain the vegetables using a strainer, reserving the liquid in a second tupperware.  Add the vegetables to a third tupperware.  Refrigerate overnight.

Pour two bottles of red wine into a large pasta pot.  Fill the rest of the way with water and bring to a boil.  While the water heats up, begin by taking the meat off of the oxtails, saving the bones and fat for a homemade stock.  Skim the fat off the reserved liquid and either discard or save for the aforementioned homemade stock.  Put the stock into a saucepan and cook on high, allowing to reduce by half.  Add the oxtails and veggies to the pot and let the liquid continue to reduce.  Cook your pasta according to the package directions and then drain.  Toss the hot pasta with the two tablespoons with butter and top with the oxtail ragu.  Serve with chopped parsley and grated parmesan.

Chef Tim’s Roast Chicken with Chardonnay Sauce, Trumpet Mushroom Duxelle and Fingerling Potatoes

*in Jay-Z voice* “Tim, you did it again.  You’re a genius.”  Not too often when I’m cooking am I reminded of the fine balance between strict adherence to technique and freestyle improvisation in the kitchen.  This recipe is like a dance – you certainly want to follow the rules to coax it into perfection, but there is room for you to do your thang as well.  In essence, it’s everything I love about the kitchen.  And as I watched my husband take the first bite of the final product and nod his head knowingly that this was something of pure majesty, I loved it all the more.

In Chef Tim Ma’s interview for this site, he talks about the importance of organization in the kitchen.  As home cooks, although we don’t go all out with a true mise en place and prep kitchen work, there is something to be said for taking time to lay out all of your ingredients before you launch into the assembly of the dish.  This recipe is a great example of this fact – chopping all of your ingredients first and setting up your kitchen before turning on the stove will allow you the luxury of breezing through this one.  When you are all finished, you take a bite and marvel at the genius your tucking into without feeling as if you slaved at all.

Tim purports that this dish is an excellent use of many important kitchen techniques – I see it as a reminder of how much there is to learn in the kitchen, far beyond what we’ve learned from our families or from puttering around on our own with a bit of trial and error.  Spending the time to figure out how to properly treat ingredients is so very necessary, and though we won’t all have the honor or luxury of attending cooking school, it doesn’t mean we can’t go out of our way with a little self-directed study on proper methods and techniques.  Consider this recipe a solid lesson with Chef Tim as the instructor du jour.

Since we don’t have access to a live demonstration of this one (yet), a trickier part of the recipe is in the deboning of the chicken leg and thigh as one piece.  While you can absolutely have your butcher do this for you, it’s a lot more interesting to grab a sharp knife and try it out for yourself.  I found this old video of Paul Prudhomme doing it, and teacher that I am, I love his level of encouragement offered to newbies trying this for the first time.  Yes, you can do this, and no, it doesn’t matter if you’ve never done it before.  Now, fancy names be damned, go get yourself some roast chicken and mushroom action.

Recipe for

Roast Chicken Leg and Thigh with Chardonnay Sauce, Trumpet Mushroom Duxelle and Fingerling Potatoes

Ingredients
2 trumpet mushrooms, cleaned and sliced
2 tbs. of butter
half of a lemon, juiced
1 shallot, minced
1 oz. of slab bacon or salt pork
1/4 c. of caramelized onions

2 chicken legs and thighs, deboned
2 tbsp dry chardonnay
4 tbsp vegetable or chicken stock
2 tbsp butter
parsley, chopped

1 lb. of fingerling potatoes
duck fat (or vegetable oil if you don’t have any)
salt and pepper

Melt 2 tbs. of butter in a large pan over low heat. Add bacon or salt pork and sweat for a few minutes without giving it color.  Add shallots and sweat without giving color for a few minutes.  Add mushrooms and continue to cook over low heat, adding a pinch of salt, pepper and the lemon juice.  The mushrooms will begin to release water – once the water is completely absorbed, stop cooking.  Add caramelized onions and toss to heat.  Set aside.

Preheat the oven to 400°.  Heat a new pan that can go into the oven over high heat with a little blended oil.  Season chicken with salt and pepper.  Once pan is hot, add chicken legs skin side down and cook over high heat for a minute.  Place entire pan in oven and cook until chicken registers 165°, about 10 minutes.  Take pan out, remove chicken, drain oil.  Deglaze pan with chardonnay, scraping up the brown bits.  Reduce wine by half, add stock and reduce by half again.  Turn fire off, add 2 tbs. of butter and whisk until incorporated.  Place mushroom mix in center of plate, top with chicken, add sauce around, garnish with parsley.

Fingerling Potatoes

To cook the fingerlings, bring a large pot of water to a boil.  Add potatoes and blanch for 3-4 minutes.  Drain and dry well.  Add about 2 inches of oil (or equivalent amount of duck fat) to a heavy bottomed sauce pan and heat until a piece of bread, when dropped into the oil, browns in 3 seconds.  Add the potatoes to the pan, being careful to stand back if the skins sputter a bit.  Allow to cook for a minute, remove and drain on paper towels and salt and pepper immediately while still hot.  If you’d like to time this all so that the potatoes are finished at the same time as the chicken, cook the potatoes as soon as the chicken goes into the oven.

Mini Beef Wellington with Morel Bearnaise and Melted Leeks

Challenge Entry in 3rd Annual Morel Recipe Competition
This recipe was my humble entry into the 3rd Annual Marx Foods Morel Mushroom Competition. Try as we might to garner a win for this exceedingly delicious recipe, we did not come up victorious (we were 3rd place in the popular vote).  But really, in all honesty, we feel as though we won the grand prize in simply getting to eat the mini wellington ourselves.  Our heartfelt thanks to all who voted and spread the word for folks to vote, and a special thanks to Karen M. for slaving with me in the kitchen.  You’re a doll!
I’m bored.  I want to have a party.  I want to have a full out blast and feast on a menu that is a hands down knock out from start to finish.  And to start it off, I want a dish that is worthy of some seriously expensive champagne wishes and caviar dreams.  I want to tuck into it with a big ol’ smile on my face and some hilarious friends nearby doing the same thing.  And I could care less about how many sticks of butter I kill in the process.

When I think of ingredients that get me truly excited, morel mushrooms are high on the list.  I mentioned to a friend that I was going to be crafting a recipe for the 3rd Annual Marx Foods Morel Mushroom Competition, and she asked what I’d do if I won 2 lbs. of fresh morels as the grand prize.  I told her I’d probably roll around in them in a giggle fit, I love them so.  The little earthy caps of goodness are so worthy of reverence, you can’t help but be overjoyed with the prospect of cooking something incredible with them.  They make me want to move to Minnesota, the state that has named the morel as their official mushroom.  Of course the morel mushroom has an invite to my party.

Since the chefs in the competition have been tasked to create “an original hors d’oeuvre recipe using dried morels,” I wanted to come up with something worthy of fireworks.  I mean, if this dish was to set off my party with a bang and feature the complex flavors of the morel mushroom, it’d need to be amazing. So of course I needed to invite filet mignon to the soiree and some bearnaise to bring it all home.  Now we’re talking!

Photo © Angela GunderThis mini version of beef wellington is elevated to the utmost of decadence with the addition of morel mushrooms.  Coupled with melted leeks and a delicate bearnaise soaked up by all the nooks and crannies in the mushrooms, the small bite belies huge flavors.  These can be served as small bites (speared with a sprig of rosemary for a fun take on a skewer) or plated with a pool of bearnaise and leeks to attack with a vengeance.  Either way, if this is your first bite of the night, know that the tone has been set for a party worth remembering.  You should totally come.  And bring that Dom P you know I like so much.  We’re getting bubbly tonight.

Mini Beef Wellington with Morel Bearnaise and Melted Leeks

2 oz. dried morel mushrooms
2 c. of beef stock
2 c. of water

2 sprigs of tarragon
1 large shallot, finely chopped
1/4 cup white wine vinegar
1/2 cup white wine
4 egg yolks
1 stick and 1 tbs. of butter, melted
1/8 tsp of white pepper
salt to taste

4 tbs. of butter
1 shallot
8 oz. of mild flavored mushrooms (oyster, white button, crimini or chanterelle), finely chopped
1/8 tsp. of black pepper
1/4 tsp. of white pepper
1/4 tsp of tarragon
1 tsp. of salt

2 leeks, white and pale green parts only
3 tbs. of butter
1/8 tsp. white pepper
1/8 tsp. of salt

3 filet mignon steaks
1 tbs. dijon mustard
12 slices of pancetta
salt and pepper
1 box of puff pastry
1 egg, beaten
1 tbs. of cream

Prep the Morels
Bring the beef stock and water to a boil.  Add morel mushrooms and turn off the heat.  Put a lid on the pot and allow the mushrooms to steep in the beef stock for at least a half an hour.

Make the White Wine Reduction
Add the white wine, wine vinegar, shallot and tarragon to a small saucepan.  Bring to a boil and then reduce the liquid to about 2-3 tablespoons.  Strain mixture and set aside to cool.

Make the Duxelle
Melt butter over low heat in a skillet.  When melted, crank up heat to medium and add your chopped shallot and mushrooms.  Stir gently to keep from sticking, and keep heat on the low side so as to not color the mushrooms.  When veggies are tender, add black pepper, white pepper, tarragon and salt.  Taste for seasoning and correct if necessary.  Continue to cook over medium low until the mushrooms absorb all of the juices released and the mixture forms a semi-dry paste.  Chop half of the morel mushrooms and mix them into the duxelle.  Set aside and allow to cool.

Melt the Leeks
Cut the leeks in half lengthwise and rinse thoroughly to remove any dirt or sand.  Finely chop the leeks.  Melt the butter in a skillet over medium heat and add the leeks.  Cook gently until tender, about 10 minutes.  Set aside.

Assemble the Wellington
Preheat the oven to 425°.  Flour a cutting board and lay out your puff pastry. Flour a rolling pin and roll out sheet into a slightly larger square.  Cut into 6 squares and top each one with a slice of pancetta.  Spoon a few tablespoons of the mushroom duxelle on top of the pancetta.  Cut each of the filets into four cubes and season with coarse salt and cracked pepper.  Brush the cut sides with a small amount of dijon mustard and place on top of the duxelle.  Top with some more duxelle and bring the corners of the puff pastry together in the center to close up the package.  Place the mini wellington seam side down on a cookie sheet lined with parchment paper. Repeat until all of the cubes have been wrapped.  Cut a small cross into the tops of each of the parcels.  In a small bowl, beat together the egg and cream.  Brush the tops of the puff pastry with the egg wash and sprinkle with kosher salt and cracked pepper.  Bake in the oven for 18-20 minutes, or until the tops are golden and lovely.  Let rest for at least 5 minutes before serving.

Make the Bearnaise
Melt the butter – I like to use a pyrex because it’s easy to pour.  Put the 4 egg yolks and vinegar reduction into the blender and mix on low. Slowly stream in half of the melted butter and allow to emulsify.  Crank up the speed to high and stream in the rest of the butter.  Your sauce will be thick and bright yellow, like a slightly loose mayonnaise.  Season with salt and white pepper to taste.  Chop the rest of the morel mushrooms and fold into the bearnaise, along with half of the leeks.  Keep warm until ready to serve.

Plate and Serve
To serve, spread a bit of the bearnaise on the bottom of a plate.  Slice one of the wellingtons in half.  Mound a small amount of the remaining leeks on the plate and top with a wellington half.  Add the morel mushrooms to the side of the wellington and garnish with chives or a rosemary sprig (or both).  Call up the crew and kick boredom’s ass with an impromptu party of the most fabulous kind.

If you’d like to serve as a passable appetizer, cut wellingtons into quarters.  Spear each quarter with a sprig of rosemary with the leaves removed from the woodier portion of the stem, allowing you to use it as a skewer.  Mix all of the leeks into the bearnaise and serve in a bowl on the side for dipping.

Tortelli with Wild Boar and Stinging Nettles

A little danger in the kitchen can pay off royally – high flames, sharp knives and occasionally some tricky ingredients serve as the makings for many a glorious supper.  Stinging nettles are not nearly as dangerous as they sound assuming that you can play by the rules.  Handled raw, they will mess you up with vicious barbs in your skin.  But once you give them a luxurious bath in some boiling hot water, they lose all their bite.  Why mess with them at all?  Because these lovely greens have an earthy, nuttiness that kicks the ass of spinach any day.

The nettles take a lovely home as the filling for meat tortelli – wild boar is simmered until perfectly tender and blended with mortadella, pancetta and cheese.  Wrapped in homemade pasta and dressed with a light sauce of cream and peas, underneath the delicate flavors lies an air of mystery and danger.  As your guests tuck into these toothsome parcels, feel free to keep the secret of your forays into adventure with the exotic ingredients contained in this recipe.  I mean, you are pretty much the next 007 of the kitchen.  Or at least that’s what I hear.

This recipe makes a large amount of pasta, so feel free to freeze any leftovers for later.  Spread the tortelli on a cookie sheet dusted with semolina and pop into the freezer, making sure that none of the pasta is touching.  If you’re sick of cream sauce for your second go round with these guys, you can use a marinara or vodka sauce to mix things up.  Or, even better, cook in a pot of chicken stock for an exemplary tortellini en brodo (tortellini soup).  For leftover filling, make crepes or buy egg roll wrappers and make canneloni.  Roll a few tablespoons of filling into the wrappers, top with bechamel or marinara and bake in the oven until bubbly, about 30 minutes.

Recipe for

Tortelli with Wild Boar and Stinging Nettles

Ingredients
1 tbs. olive oil
2 tbs. butter
1 lb. ground wild boar
2 c. of chicken stock
1/2 onion
3 oz. of pancetta
6 oz. of mortadella
4 eggs
2 c. of grated locatelli
1/4 tsp. of nutmeg
1 tsp. of ground sage
1/8 tsp. of ground rosemary
1 shallot, finely diced
8 oz. of stinging nettles, blanched and chopped
1/4 tsp. of white pepper
salt to taste

1 c. of cake flour
2 c. of all-purpose flour
4 eggs
pinch of salt
1 tsp. of olive oil

2 tbs. of butter
2 tbs. of flour
2 c. of heavy cream
1 c. of milk
1 c. of locatelli, grated
1/8 tsp. white pepper
salt to taste
1 c. of green peas

Optional Equipment
pressure cooker
stand mixer with dough blade
pasta attachment for stand mixer
3 in. ring mold

Begin by making the meat filling.  Melt the butter and olive oil in a dutch oven.  Add the ground boar and onions and cook until the meat is no longer pink.  Add the chicken stock and simmer on medium-low until all liquid has evaporated, about an hour.  Alternatively, you can cook this mixture in the pressure cooker for 15 minutes to save time.  Allow to cool a bit and set aside.

In a food processor, add the mortadella, pancetta, nettles, rosemary and shallots and chop finely.  Add the wild boar and blitz until a smooth puree.  Remove mixture to a large bowl and add the eggs, cheese, nutmeg, sage and white pepper.  Taste for salt (should be on the saltier side) and reseason.  Set aside.

Now to make the dough – and feel free to use your favorite pasta recipe (or pre-made pasta sheets to save time).  In the bowl of a stand mixer, add the flour and the salt.  Make a well in the middle and add the eggs and olive oil.  Fit the mixer with the dough blade and allow to mix until a slightly sticky but well-mixed dough forms.  Dust the countertop with flour and knead until smooth.  Wrap in plastic and refrigerate for about an hour.

Before I start making tortelli, I like to set up a couple of elements to make the job easier:

  • a small bowl of water for sealing the edges of the pasta
  • a few cookie sheets lined with wax paper and dusted with flour (semolina works well)
  • a little mound of flour to dip the bottoms of each tortelli in after they are rolled (which prevents them from sticking to the wax paper)

Once your prep space is set up, start with the pasta dough.  Take out the dough and cut into four segments.  Grab a hunk of dough and dust with flour, leaving the other three segments wrapped in plastic so as not to allow them to get hard.  Run the dough through a pasta maker, starting with the widest setting and working your way down to the second to thinnest setting (on my pasta machine, that’s #7).  Flour the counter and lay out the sheet of dough.  Cut out circles using a ring mold.

To make the tortelli, take a pasta round and fill with a few teaspoons of the filling.  Brush the edge with a little bit of water and fold into a half moon, pushing out any excess air as you seal the edges.  Take the two points of the half moon and fold them in on each other, squeezing them together to seal.  Dip the bottom of the tortelli in the flour and then place on the cookie sheet.  Repeat until you run out of dough.

Put a large pot of water on to boil.  While it’s warming up, make your sauce.  Melt the butter in a saucepan.  Mix in the flour and stir to form a paste.  Slowly stir in the milk and cream in dribs and drabs, constantly whisking to form a smooth sauce.  Crank the heat up and keep on whisking until the sauce thickens.  Stir in the locatelli, white pepper and salt and turn heat down to low to keep warm while the pasta cooks.

Once the water comes to a boil, drop in the tortelli.  Once they’ve cooked for 3 minutes, toss the peas into the water.  Allow to cook for a mere 30 seconds, and then drain.  Toss the pasta with the sauce, making sure to be careful not to break any of the tortelli, and serve immediately.

Pan-Fried Pork and Chive Dumplings (Jiao Zi)

The pork and chive dumplings you get in Chinatown here in NYC usually involve the thin skinned wrappers and garlic chives, a flat, milder flavored variety.  Because these can be hard to come by, I’ve modified this recipe to use a small amount of regular chives, some cilantro and a couple bunches of scallions. I use a traditional jiao zi wrapper made out of a cold water dough, making these heartier and more robust that the usual pork and chive dumplings.

For something a little lighter, use thinner pre-made dumpling wrappers (found in Asian Supermarkets) and cook like traditional potstickers. Basically, you steam the dumplings in a covered skillet with 1/4 to a 1/2 c. of water and a few drops of oil until the water evaporates and the bottoms crisp up.  Hence the name “potstickers” – I know, sometimes the world just makes a whole lot of sense, doesn’t it?  For a great potsticker recipe from start to finish, check out my good friend Chef Tim Ma’s Pan Fried Pork and Chive Potstickers.

The best part of this recipe, and all homemade dumplings, is that the quality is much higher than what you’ll find at restaurants and dumpling joints.  You control exactly what is added to the little delicacies, and you still end up keeping the price down.  Fresh ingredients at a low price is a hard thing to come by these days, so definitely celebrate a little when you tuck into a plate of these bad boys.

Pan-Fried Pork and Chive Jiao Zi

4 c. of flour
1 1/4 c. of ice water
1/2 tsp. of salt

3/4 lbs. of ground pork
2-3 raw shrimp, minced (optional)
1/4 c. of water
1/2 in. of ginger, minced
1 tsp. of cornstarch
2 tbs. of soy sauce
2 tsp. of sherry
2 tsp. of sesame oil
1/2 tsp. of salt
4 tsp. of sugar
3 bunches of scallions, finely chopped
1 small bunch of cilantro (10-15 stems with leaves), minced
1 small bunch of chives (the plastic pack from the store is fine)

Start by making the dough for the wrappers.  Add the four cups of flour to a bowl along with the salt.  Slowly stream in water, stirring as you go and making sure not to put any actual ice cubes in the mixture.  Add only enough water to get the dough to hold together – if it gets too sticky, add a bit more flour.  Knead dough until silky and elastic (about 5-8 minutes) and then wrap with plastic and let chill in the fridge.

Mix all ingredients (except for scallions, cilantro, chives and water) until smooth and a little stringy, making sure to stir all in the same direction.  Next, stream your water into the mixture in small amounts, stirring in between each addition.  Lastly, add the scallions, cilantro and chives and stir again.  Set aside.

Break out your dough and pinch a chunk off the size of a clementine.  Run the dough through a pasta roller or roll out by hand to about 1/4 in. thick.  Cut out 3-4 in. circles using a cookie cutter or the mouth of a large cup (I use one of my hubby’s beer steins).  Place a heaping teaspoon of filling onto the wrapper and pleat the edges to close.  Set aside on a floured cookie sheet.  Continue to fill the dumplings until you run out of filling or dough – whichever comes first.

Fill a large pot with water and set to boil.  When the water is ready, plunk in about 8-12 dumplings and watch the water go from a boil to a simmer.  Let the water come back to a boil and then pour in a rough cup and a half of cold water.  Let the water come to a boil again and then add cold water a second time.  Let the pot come to a boil one last time and then remove dumplings from the water with a slotted spoon.  Repeat until you’ve cooked all of the dumplings that you could possibly eat in one sitting.

Serve with Sweet Soy Dipping Sauce.

Note

For a different taste, pick up the thin, round pre-made dumpling wrappers from your local asian market.  You can even use the wonton wrappers found in the deli aisle of the regular grocery store, and cut the squares into rounds with a ring mold.  Fill your dumplings and set aside on a floured cookie sheet.  Add 3-4 tbs. of cooking oil to a skillet and turn on high.  As the pan warms up, place the dumplings, seam side up, in the pan one next to another.  When the pan is super hot and the oil starts to sizzle (a few minutes), add about 1/2 c. of water to your pan.  Immediately cover to trap the whaft of steam that arises when you add the water to the hot pan.  Cook until the water has evaporated and the bottoms of the dumplings crisp up.

Basil Ice Cream (Basil Gelato)

I feel like we all need more awe-inspiring, eyes of wonder moments in our lives.  Moments when, on a total leap of faith, our handiwork comes together in majestic ways.  I have to say that, for me, making ice cream for the first time was a blissful moment of awe.  I trusted that my uber-creamy, eggy base would taste good.  I trusted that I had left my ice cream maker attachment in the freezer long enough.  I even trusted that I made the right decision to simply get a KitchenAid mixer attachment rather than a CuisineArt ICE50BS Supreme Ice Cream Maker for a whopping $200+ dollars, as per David Lebovitz.  A little pricey, mister.  And my KitchenAid attachment has yet to fail me.  Case in point, my recipe for Strawberry Frozen Yogurt was a KILLER – so good that I can’t post it yet because my darling husband ate every last bit of it before I could snap a picture.  In the words of Ron Burgundy, “How’d you do that? I’m not even mad…that’s amazing.”

Basil Gelato © Spice or Die

I decided to make a batch of basil ice cream because I am a fan of not only the glory of the celebration of the sweetness of basil, but mainly because of the polarizing nature of this dessert.  It’s a love it or hate it kind of thing.  Maybe for the folks that try it and hate it (my best friend Kate’s mom, Dennis eating Strawberry Fro-Yo and leaving all of this behind in the freezer), they’d need to give it a few chances.  It’s different, yes.  But it is so so very good. Eyes of wonder good.

I first tasted basil ice cream at a special birthday dinner with my mom – I decided to take her to Tosca in DC for her celebration, just the two of us.  She had fallen in love with the place after we took my sister there for her graduation celebration.  The place is gorgeous – uber-minimalist and luxe, bringing your focus directly to the food.  My mom is an August baby, so when we went, they were serving a special tomato menu, celebrating the glorious heirlooms available during that small window of time in the summer that you feast like a king, nay, a tomato demi-god.  So what do they close the meal with?  A sweet tomato tart with basil gelato.  Go through the mental checklist with me: tomatoes and basil go together? Check.  Tomatoes can be sweet? Check. Basil can be sweet? Check.  It was a go on all counts.  And kids, the final result was one etched in my brain on the short list of tastes I’ll never, ever forget.  I swoon just remembering that very first bite.

It was inevitable that I’d make it for myself someday, and once again inevitable that I’d share it with you.  Definitely tuck into this with the tomato tart as well, if you want the full experience, but know that this is a treat all by itself.

Basil Ice Cream (Basil Gelato)

3 c. of basil leaves
2 c. of heavy cream
2 c. of whole milk
1 c. of sugar
2 vanilla beans
1 pinch of kosher salt
12 egg yolks

Bring a small pot of water to a boil.  While the water comes to a boil, take a large bowl and fill with cold water and 6-8 ice cubes.  Plunk the basil leaves into the boiling water and stir for about a minute and then drain and place into the ice bath to shock the leaves.  Let them hang out in the ice water for a bit while you prep the creamy good stuff.

In a heavy-bottomed saucepan, add the milk, heavy cream, sugar, and kosher salt.  Using a paring knife, carefully split the vanilla beans in half and scrape the black pasty goodness in the middle of the bean into the cream.  Add the whole beans to the milk as well once they’ve been scraped.  Bring the mixture to a slow simmer, making sure not to let it boil.  Once simmering, continue to cook for 2-3 minutes.

Drain the basil leaves and add to a blender along with a cup of the hot cream mixture, making sure not to include any of the vanilla bean pods.  Place the lid on the blender and a towel over the lid to prevent a hot, sticky splatter from the blended cream.  Blend on high until smooth and then strain mixture back into the rest of the cream using a fine strainer or chinois.

Set up a double boiler – you want a metal bowl for the top that fits over a pot on the bottom.  You want to add enough water to the bottom so that it will easily boil without touching the bottom of the top pot.  Wikipedia has a diagram of it that hilariously looks like it was drawn in MS Paint, but gets the point across.

While the bottom pot of the double boiler is coming to a boil, work off the heat and take your top pot and separate 12 egg yolks into the bowl.  Beat until pale golden and smooth and then slowly add a cup of the hot cream, whisking the entire time to keep the mixture smooth and prevent the egg from scrambling.  Set the pot over the now boiling water and continuously whisk in the rest of the cream.  Discard the vanilla pods, or clean them off and reuse them to flavor sugar or coffee – Marx Foods actually has a huge list of suggestions of what to do with the pods.  Keep on whisking until the mixture thickens and the ice cream base can coat the back of a spoon.  Turn off the heat.  Strain the mixture into a large bowl and let the base cool in the fridge.

Once cooled, pour the ice cream base into your ice cream maker and follow your manufacturer’s instructions.  When finished, remove to a tupperware and freeze for a little bit to allow the ice cream to solidify a bit more.  Serve to people with curious palettes looking to try a little something special.

Arancini (Sicilian Fried Rice Balls or Supplí)

I get a kick out of dishes that manage to both impress folks and meet their requirement for comfort-food status.  Let’s face it, gooey mac and cheese or creamy mounds of mashed potatoes are not loved for their looks.  In fact, the massive piles of goodness only make the foodie centerfolds because they bring back atavistic longing of the food of our childhood.  Which is exactly what comfort food does  – it nourishes us and brings us to a place just like home.  But if you really think about the taste profile of comfort food in an of itself, it’s typically simple in nature, and oftentimes mild in flavor.  Color-wise, it’s oftentimes blah as well – fried chicken, mac and cheese, mashed potatoes and meat loaf all hang out in the beige to brown arena.  Now, I’m not saying that this is a bad thing, or even that it’s the rule across the board – I just think it’s worth noting that the requirements of comfort food need only be that it’s tasty for the soul and consumable in huge quantities.  So, what if we celebrated the kinds of comfort food that not only felt good to eat, but also looked just as lovely.

Arancini © Spice or Die

Arancini are gorgeous – the name itself means “little orange” in Italian and is an homage to the glorious golden color of these tangerine-sized delights as they are removed from the fryer.  Crunchy and light on the outside, and creamy and luxe in the inside, these little babies are comfort food at its best.  Probably my favorite part about this recipe is that you start with leftovers – the base of the arancini is risotto, left to coagulate and thicken to a point that you can form it into mini balls.  For those of you that make risotto from scratch, you know that it’s not so good as leftovers – the distinct grains of arborio rice turn into a porridge of sorts that’s a far cry from the glory that is served fresh out of the pot.  So what better way to resurrect it than to wrap it around bits of mozzarella, bread them and fry until lovely.  I say ye.

In a lot of these recipes that call for frying “until golden” I don’t ever mention the need for a thermometer – it’s silly given that a) I always use one and b) you should too.  A lot of the fear of frying comes from not getting the temperature just right – if the oil’s too hot, your food will burn on the outside before it cooks in the inside; cook too low and your food will come out greasy.  Remove the guessing game from the equation – buy a frying/candy thermometer and be precise.  You really don’t have an excuse as they are cheap and readily available (mine came from Bed, Bath and Beyond for like $7).  Besides, you are all about kitchen perfection. I know this for a fact.

I think that what sends this comfort food over the top is the brightness of presentation – beige is lightened up by bright, zesty marinara and basil.  It’s like a little Italian flag in every bite – a whole lot sexier than a mess of elbow macaroni.  Feel free to experiement with fillings and sauces – go decadent and dip them in a fontina funduta, or zesty with a nice basil pesto.  Stir spinach, peas or mushrooms into the risotto.  One of my favorite places in the whole wide world, La Fontanella, serves their supplíwith a savory meat ragu – they come as an appetizer but are just so filling, you could make a meal of them.  In the proverbial words of Humpty, “Dowhatchulike” and I am sure that you will be relishing in comfort-food majesty.

Arancini (Sicilian Fried Rice Balls or Supplí)

3 c. of leftover risotto
2 oz. of mozzarella, cut into 16 cubes
1/4 c. of flour
1 egg, beaten
2 tbs. of water
1/4 c. of bread crumbs
oil for frying

While your risotto is still cold, form into 16 small portions – sometimes I take a large bowl and put the risotto inside, and then score it like a pie into 8 slices.  I then take each “slice” and split it into two pieces.  Voilá – sixteen portions!  Wet your hands and form each of the portions into a smooth ball.  Push a cube of mozzarella into the risotto and roll again so that the cheese is completely covered by the risotto.  Place on a cookie sheet lined with a sheet of wax paper.  When you’ve rolled all of the arancini, place in the freezer to allow them to solidify a bit.

While the arancini are cooling, break out 3 shallow dishes.  Add 1/2 c. of flour to one dish.  Scramble the egg and two tbs. of water together in the second dish.  Place the breadcrumbs in the third dish.  Take the arancini out of the freezer and start an assembly line.  First dredge them in the flour, shaking off the excess.  Then, plunk them in the egg to wet them all over.  Lastly, dredge in the breadcrumbs and place on a clean dish or another cookie sheet lined with parchment.

Heat a pot of cooking oil to 320° and gently lower a batch of arancini into the hot oil (5 at a time is good).  Cook until beautifully golden on the outside, about 7 minutes.  If you don’t cook your arancini long enough, they will not be meltey goodness in the inside.  Drain on paper towels and serve with marinara for dipping.

Note

  • Use any risotto recipe you’d like to make these guys – just make sure that it’s good and cool when you start working with it.  My recipe for Rock Shrimp Risotto is a good starting point – just leave out the shrimp and you are in business.
  • After you dredge the shrimp in flour, egg and breadcrumbs, you can freeze the arancini.  They can be fried from frozen at 340° for 9 minutes.

Morel Mushroom Bacon, Egg and Cheese

Rob From the Rich and Give Truffles to the Poor

I know what you are thinking.  Based on the fancy pants ingredients in this dish and the haute descriptions, this seems like something reserved for trust-fund babies and old money fat cats.  Not the case, plebian reader.  I like to think of this as superior breakfast for the adventurous palette.  Got a little time after a hard week and want to treat yourself to something lovely?  Snag the ingredients for truly THE best bacon, egg and cheese of all time.  I’m talkin’ eternity.

Morel Mushroom Bacon, Egg and Cheese © Spice or Die

This recipe is a lovely tower of creamy eggs, rich goat cheese bechamel, savory morel mushrooms, and prosciutto baked until crispy as bacon.  The whole mix is atop a toasted round of brioche (cut with a $1 ring mold – pick one up and start impressing folks with your presentation skills) and topped with seasonal violets and leaves of fresh thyme.  I usually tell people to make dishes for people that they love, but this is reserved for people in the upper echelons of your love contingency.  Like the top 5.

Truthfully, you can go into this very budget-mindedly without sacrificing on taste.  Brioche can be replaced with challah or another cheaper, eggy bread.  Goat’s milk cheese can be acquired for a reasonable price and at most grocery stores.  Same deal with the prosciutto.  There is no replacement for morels and truffle oil, but they are your only splurge and you won’t be using a lot of them.  If you want my opinion, although it won’t be nearly as luxe, you could get away with replacing the morels with a super fresh in-season mushroom and leave out the truffle oil.  Not the same dish, but still decadent as hell.  But really, get the truffle oil.  You use so little and if you’ve never had truffles before, you need to.  You really, really, really need to.  Like now.

This recipe was born from our attempts (and by our, I mean my friends Richard and Amy, whom I invited to help me cook and who brought the lovely violets that I think make the presentation) to create an award-winning entry into the Marx Foods Morel Mushroom Competition.  We were sent 1 oz. of morel mushrooms and asked to make something lovely.  Well, creative kids that we are, we ended up making two dishes, and this, my darlings, is the runner up.  Can you believe that we found something crazy enough to guild the proverbial lily? And it wasn’t truffled eggs?  Make this one first, and then if you want to up the decadence, read our entry in the competition.  By the way, I’d be remiss in not thanking Justin Marx for his inclusion of my humble site in the short list of competitors.  Talk about good people 🙂  Not to mention their products are ever-so-lovely – I spend hours just thinking how much damage I can do with their fabulous ingredients.  A cook’s dream.

But I digress, as it’s time for some decadence. This recipe is NOT hard to cook.  In fact, the hardest part is the grocery shopping.  It does, however, go in stages, with all of the components assembled at the last minute.  It’s forgiving, though, so take your time stirring and assembling, and maybe enlist those aforementioned people you love in putting the whole thing together. And then get them to wash the dishes.

Morel Bacon, Egg and Cheese (Truffled Eggs on Brioche with Morels, Goat Cheese and Prosciutto Chip)

1/4 oz. of dried morels
1 c. of chicken stock
2 tbs of butter

3 slices of brioche
2 tbs. of butter

2 prosciutto slices

2 tbs. of butter
2 tbs. of flour
2 c. of milk
1/3 c. of cream
1 c. of mild goats milk cheese, grated (we used Midnight Moon Goat from Whole Foods, but use whatever you like, to include 8 oz. of mild soft goat cheese)
pinch of black pepper
pinch of white pepper
pinch of nutmeg
pinch of cayenne
1 tsp. of salt

6 eggs
2 tbs. of truffle oil
3 tbs. of butter
1 tsp. of salt
1 tsp. of white pepper
2 tbs. of cream

violet blossoms
fresh thyme leaves

Round one – prep your morels.  Bring your stock to a boil and plunk in your morels.  Cover and let sit for 30 minutes or until mushrooms are puffy and lovely.  Strain, making sure any grit is poured out with the chicken broth.  Slice morels in half and sauté in a pan with 2 tbs. of butter on medium love until soft – about 3-4 minutes.  Set aside.

Round two – begin by prepping your brioche.  Cut out slices from a loaf, or if you want to be ultra fancy, cut out rounds using a 3″ ring mold.  Cookie cutters also work well.  Plunk 2 tbs. of butter into a skillet and melt on low heat.  Turn up the heat to medium low and toast the bread on each side until golden.  Set aside.

Round three – make your prosciutto chips (and you can skip this step, my vegetarian darlings).  Line a baking pan with foil and crank your oven to 450°.  Lay prosciutto flat on the baking pan, making sure that the pieces aren’t touching.  Place in the oven and bake until crispy and dark rose, about 10-12 minutes.  Check once or twice to make sure that it doesn’t burn – there’s not much fat on the prosciutto so they can cook quickly depending on the thickness of the slices.  Set aside.

Round four – make your bechamel (cream sauce).  Melt 2 tbs. of butter in the same pot you sautéed your morels in on medium low.  Whisk in the flour and stir until smooth and all incorporated – about 1 minute or so.  Slowly add your milk in dribs and drabs, whisking to prevent lumps.  Keep on whisking and crank the heat to medium to coax the sauce into thickening.  When it gets lovely and creamy, pour in the heavy cream.  Whisk and add the black pepper, white pepper, cayenne, nutmeg and salt.  Turn off the heat and whisk in the grated cheese.  If you are using goat cheese instead of a hard goat’s milk cheese that can be grated, just toss spoonfuls of it into the sauce and stir.  Taste for salt and pepper and correct seasoning.  Set aside.

Round five – egg action.  Scramble together 6 eggs, truffle oil, salt and white pepper.  Melt 3 tbs. of butter in a skillet on low and then slowly pour in your eggs.  Keep your heat LOW the whole time and gently stir your eggs as small curds form delicately.  This is a slow process, but not complicated.  Just keep stirring until the eggs are creamy and shiny and still a little wet.  Pour in the cream and turn off the heat.

Now, for the big finish – grab some plates and put a piece of brioche on each.  If you are going for fancy presentation, put the ring mold over the brioche and gently put 1/3 of the eggs right into the ring mold.  Otherwise, just portion the eggs right over the toasted brioche however you’d like.  Split the morels amongst the three plates of eggs.  Drizzle a couple of tablespoons of goat cheese bechamel over the works.  Sprinkle the thyme leaves and the violets over the entire plate.  Spear the top of the eggs with a shard of prosciutto.

Tuck into some majesty.
