Lasagna Bolognese

This one, my darlings, is a labor of love.  With a toothsome, slow-simmering bolognese in the style of Marcella Hazan (which some might even call blasphemy for even mentioning her name in conjunction with a sauce that is not her exact recipe – to which I proffer that there are as many bolognese recipes as there are mammas in Bologna making their personal “secret” recipes) and a creamy bechamel in lieu of layer of ricotta and mozzarella, this true take on lasagne bolognese is something special.

Don’t be deferred by the time it takes to make this (at least 5 hours) and the list of ingredients – you’ll have lasagna for 6-8 comfortably, plus extra bolognese to dress around two pounds of pasta, so expect to not have to cook for some time afterwards while relishing in the glorious Italian leftovers.  The only time saver in the bunch comes in the form of the no-boil lasagna sheets – these babies, though instant, are lovely in their thin, delicate texture.  Much better than dealing with blubbery, curly edged classic lasagna noodles and far more refined in taste.  Though this is work, it’s very rewarding, and those that get to sample a bit will make you realize that maybe all that time was well worth it. Chicken, Sausage and Shrimp Jambalaya

For as long as I’ve known, my family has been whipping up several varieties of comforting rice dishes – I can recall many a time coming into the kitchen to a pan of Arroz con Pollo finishing up in the oven, or a pot of Jambalaya simmering away on the stove.  This version of the simple dish, a combination of rice, chicken, sausage, seafood and veggies, reminds me of home each and every time I whip up a batch.

This version is far from super traditional, but I love it because it is way easy to prepare and incredibly piquant and flavorful.  Some of the harder ingredients to find are substituted with pantry and supermarket staples.  Though cajun purists would call this Creole Rice for its inclusion of tomatoes, culinary great Paul Prudhomme puts tomatoes in his, so I feel that I’m not in the wrong.  Plus, this dish’s roots are born of the freshness and availability of ingredients, so use whatever suits your fancy – tasso ham (or smoked ham), seafood of any kind, smoked andouille sausage, duck, and homemade stock all have a place in this dish.  Case in point, this recipe originates from the Spanish classic, paella, and if it weren’t for a few noble chefs swapping out a few ingredients, we wouldn’t have the jambalaya that we know today.

Recipe for

Chicken, Sausage and Shrimp Jambalaya

Ingredients
1/2 lb. of raw shrimp, peeled and deveined
1 kielbasa, thinly sliced into rounds
1 lb. boneless skinless chicken thighs, cut into large chunks

2 tbs. of olive oil
2 bay leaves
1 medium onion, finely chopped
2 scallions, finely chopped
2 stalks of celery, chopped
1 green bell pepper, chopped
4 cloves of garlic, minced
3 sprigs of fresh thyme
3 plum tomatoes

1 can of tomatoes with chilies
seafood stock (can substitute beef or chicken)
1/4 tsp. of white pepper
1/4 tsp. of black pepper
1/2 tsp. of garlic powder
1/8 to 1/2 tsp. of cayenne pepper (to taste)
pinch of oregano
1 tbs. of Worcestershire sauce

2 c. of converted rice (such as Uncle Ben’s)

splash of white wine vinegar
scallions or parsley for garnish

Season chicken lightly with salt and pepper.  Heat the olive oil in a dutch oven and add the chicken.  Brown very well on both sides and then add the onion, scallions, celery, bell pepper and garlic.  Once vegetables begin to soften, add the kielbasa, thyme and bay leaves.  Allow to cook for a minute and then add the chopped tomatoes, white pepper, black pepper, garlic powder, cayenne and oregano.  Stir in the rice.

In a 4 cup pyrex or a measuring cup, drain the juices of the can of tomatoes into the cup.  Dump the tomatoes into the dutch oven.  Add the tablespoon of Worcestershire sauce into the measuring cup, and then add enough stock to make 3 3/4 cups of liquid.  Add the mixture to the pot and stir.  Bring the pot to a boil, cover and turn it down to a simmer.  A trick, if you are careful, is to stick your ear to the bottom of the pot – you should hear a gentle bubbling.  If it sounds like hell boiling over, turn the heat down.  If you hear nothing, turn the heat up.  Cook for 20 minutes, undisturbed.  After 20 minutes, take the top off and add the shrimp.  Recover and cook for an additional 5 minutes.  Turn off the heat and remove lid.  Stir a splash of white wine vinegar into the jambalaya and taste rice for doneness – it should be tender at this point.  If not, turn heat back to low and cook another few minutes.  If the rice is done but there is too much liquid, let rice sit, covered, for 5-10 minutes so that the liquid will be absorbed into the rice.

Serve with scallions or parsley and tabasco sauce.

Caramel Apple Punch

I’m not sure how my sister Lexi and I came up with this punch recipe, but it’s just ridiculously good.  Despite the strong alcohol trifecta in play with this one, it tastes just like a smooth, delicious caramel apple.  Plus, the Goldschlager, usually the troublemaker at the party, plays nice here with the perfect flavor of cinnamon.  A little Martinelli’s on top for sparkle and a good quality fresh apple cider for body and you are in business.

We serve this cold, but you can absolutely have it warm as well – just make sure to add the alcohol after you’ve warmed the cider.  This recipe also doubles and triples well into a punch for a bunch, so don’t be afraid to break it out at your next Halloween or Christmas party.
Caramel Apple Punch

Caramel Apple Punch

1 1/2 oz. Butterscotch Schnapps
1 oz. Goldschlager
1 oz. Sour Apple Pucker
Apple Cider
Sparkling Cider

Fill a highball glass with ice and add the Apple Pucker, Goldschlager and Schnapps in that order.  Fill the glass just about up to the top with apple cider and then top with a splash of the sparkling cider.  Garnish with a slender apple wedge.

To make as a punch, combine 1 part Goldschlager, 1 part Sour Apple Pucker and 2 parts Butterscotch Schnapps.  Add 4 parts fresh apple cider and 1 part sparkling cider on top right before serving.  Serve in a punch bowl with thin slices of apple rings and the ice on the side.

Chicken Soup with Noodles

From an early age, I’ve been a sucker for blubbery noodles in chicken soup.  Doughy and dumpling-esque, these treats could be a meal of their own, languishing in a bath of shredded chicken, carrots, celery and light broth.  We used to go to this restaurant in the mall near our house that was an all-you-can-eat soup and salad buffet.  The main draw for me was always the chicken soup, and I cursed the little crocks there to use for the soup because they just couldn’t contain all the noodle majesty that I was looking for.

Years later, a trip to the substandard Sweet Tomatoes (I know, I should have known) brought back memories of my earlier favorite.  They make a Chicken Noodle that brags about just being chicken and noodles, which would be fine if the soup weren’t flavorless.  And yet, it comes so close to awesomeness with their perfectly doughy, homemade noodles.  I actually had my husband get me two takeout containers of the stuff and scoop out mostly noodles, bring it home and add it to homemade broth of carrots, onions, celery and parsley.  Divine!

But not worth setting foot in a Sweet Tomatoes.  Why couldn’t I make these wondrous babies at home?  Well, after a little research on the web and a little inspiration from For the Love of Cooking, I was able to recreate happiness in a pot.  I’ve officially had my cake and eaten it too.  If by cake, we’re talking about a big ol’ bowl of chicken noodle soup.

Recipe for

Chicken Soup with Noodles

Ingredients
1 egg
1/3 c. of milk
2 c. of flour
1 tsp. of salt
1/2 tsp. of white pepper

ingredients for chicken soup (chicken, celery, carrots, bay leaves)

In a standing mixer, add egg, milk, salt and pepper.  Mix until blended and then add flour.  Mix on low to medium setting until a dough is formed and a ball gathers around the bowl.  Remove dough from the mixer and knead a bit on a flat surface to gather up dough – very briefly, only about 30 seconds.  Wrap dough in plastic wrap and refrigerate for 30 minutes.

Cut the dough into three portions.  Using a pasta roller (or for me, the pasta attachment for my Kitchenaid) roll out the dough on the widest setting until silken and 1/8 of an inch thick.  Move dough to a sheet of wax paper and cut into strips with a cookie cutter.  Know that your noodles will double in size once cooked, so for blubbery ones like I like, I cut them into 1/4 in. by 2 in. lengths, for 1/2 in. by 4 in. noodles once cooked.  Let noodles rest on the wax paper for an hour or so (you can let them hang out while you tend to your soup) to dry a bit.

Make a pot of chicken soup by either following this recipe for homemade chicken soup or by warming 4 quarts of chicken stock with 2 finely sliced carrots, 2 finely sliced celery stalks and a few fresh bay leaves.  Shred the meat from a store-bought rotisserie chicken and add to the soup.

Drop the noodles into a pot of hot broth and cook until tender all the way through, about 45 minutes.  If you’ve cut your noodles thinner, they will cook faster.  I sometimes cook the noodles up to an hour to get them super tender like dumplings.  The longer you cook, the more broth that is absorbed and the more tender your noodles.

Feast of the Seven Fishes

Holidays are about traditions – both making them and breaking them.  Given my wide splay of ethnic background, it tends to be the case that I manage to do both of these things each and every year with a slightly different celebration that meets one of our many traditions.  I feel like this is the way it is with most of us – over time we build up a collection of various customs that are an amalgamation of all of our traditions put together.

This year, we decided to give a shout out to Sicily (both my husband and I are of Sicilian decent) with the Feast of the Seven Fishes.  A custom with origins in Southern Italy, a series of fish dishes (and no meat) are prepared for Christmas Eve.  The number of dishes varies – some say it’s seven for the seven sacraments, or 10 for the commandments.  It’s at the point now where people come up with a number of dishes between 7 and 15 and assign a biblical association for that number.  At the heart of the celebration is a gathering of family and friends for a delicious meal and (hopefully) fine company.

One of the must-haves for the Feast of the Seven Fishes is baccalà or salt cod.  In another cultural twist, our Feast of the Seven Fishes contained two preparations of baccalà in the traditional Brazilian manner (called bacalhau), fried into small balls and baked with garlic, onions, potatoes and hard boiled eggs.  There’s something about the blended traditions that truly makes it a holiday for me.

If you’d like to get on a little fish action yourself and create a new family tradition of your own, here is the road map for our Feast of the Seven Fishes.  Have fun with it, add as many or as few fish as you’d like, and chow down Sicilian style.

Cold Seafood Salad

One of my husbands early memories was of his father making a special seafood salad at Christmastime.  He did a little research and found a close version online, that we adapted to make it like the one he knew as a child. I’m lazy and I don’t like to spend my entire life cleaning seafood, so we purchased the squid pre-cleaned and the octopus pre-cleaned and cooked at Whole Foods (the octopus was in the Seafood Salad area of the store).  The rest of the goodies are poached in a flavorful liquid of herbs and vegetables and then tossed with a light vinaigrette and crisp veggies.  Despite the sheer number of ingredients, this is one of the most beautiful things you can put on your table.

Bolihnos de Bacalhau

These croquettes of salt cod are crispy and light on the outside, and tender and moist on the inside.  Soaking the cod for a goodly while gets rid of the fishiness and elevates the taste of this festive, bite-sized treat.

Crab Stuffed Mushrooms

Growing up so close to the Chesapeake Bay, blue crab is more of a right than a privilege for me, and what seafood feast would be complete without it.  These dainty suckers leverage lump crab for sweetness and claw meat for cost efficiency.  The seasoning is traditional, eastern shore, crab cake style, as yet another shout out to the land of my ancestors.

Fettucine al Langostra

Who doesn’t love lobster?  Strangely, my sister doesn’t.  But this incredibly simple and delicious preparation of fettucine with tender lobster meat was gobbled down by her and won her praises.  If that’s not a Christmas miracle, then I don’t know what is. Use good egg fettucine for the pasta and fresh basil to brighten things up.  To save time during the feast (since you are cooking most everything at once), I used a jar of Rao’s Arrabiata sauce, which is delicious, but way too expensive at $9 a jar.  I found a bottle of White Linen Gourmet Marinara at Costco for $4 that actually tasted BETTER than the Rao’s – no joke.  If you go that route, just make sure to add a heavy dose of crushed red pepper for kick.

Linguine alle Vongole

Linguine with white clam sauce, for me, is comfort food at its best – it doesn’t take a hell of a long time to prepare, it’s got a healthy dose of garlic and red pepper for kick, and at the end of the day, who doesn’t want to tuck into a mound of tender pasta. I use my Poorman’s Linguine with Clam Sauce for this one, but add fresh clams to the mix.  Simply heat some olive oil and garlic in a saute pan and when hot, pour in a cup of white wine.  Add a pound of small clams (I use manila clams) and pop a lid on the pan.  Let steam in the wine garlic mix for a short 5 minutes and then scoop out the open clams and put them on top of the pasta.  Discard any clams that haven’t opened after cooking.

Bacalhau Gomes de Sá

Though this dish is Portuguese in origin (Porto to be exact), it’s a favorite among Brazilians as well.  The dish was supposedly created by a wealthy cod distributor’s son, who after being disowned, was forced to work in a restaurant.  His legacy was this dish, a delicious combination of cod, tender potatoes, sautéed garlic and onions, and topped with hard boiled eggs, olives and parsley. This recipe reminds me of whenever my great grandmother would come into town with heaps of bacalhau ready for the cooking.  Upon her arrival, it was a sure thing that Gomes de Sá was going to be prepared shortly thereafter.

Tuna (or Swordfish) with Gremolata

Nothing says majesty like fresh fish with a lovely topping of lemon, garlic and herbs.  Simplicity is the focus, so the freshest of fish is necessary in this one – get sushi grade (or Grade #1) tuna, or the brightest, firmest fillets of whatever you’d like.  While you can spread the fish with the gremolata and then broil them, with the tuna I like to sear them in a pan to control the doneness (I like the steaks rare) and then slather the hot fish with the lemon mixture so that it melts into the fish. Gremolata is traditionally a combination of lemon, parsley and garlic, but here, I add rosemary instead of the parsley as it is hardier and holds up to the many other bold flavors at this feast.

Sauteed Cavolo Nero

Called black kale or dinosaur kale, this leafy green is a fabulous taste sensation for anyone that loves bitter greens.  Plus, it matches up with the sweetness of the seafood and sauces with outstanding strength.  This recipe comes straight from one of my favorite foodie websites, Chow.com, and utilizes orange juice, garlic and onion to create the most perfectly rounded flavors in this dish.  A major keeper, I didn’t even have to tweak this recipe one bit, which absolutely NEVER happens when I’m in the kitchen. If you have any leftovers, you can fold them into a delicious soup, like a Caldo Verde (Portuguese Sausage and Kale Soup) or a Ribollita (Italian Kale and White Bean Soup with Croutons).

Easy Pumpkin Ravioli

I got your memo.  The one about wanting to have more time for your various hobbies (costume-making for squirrels, jetskiing in ascots and sweet dance moves) all the while still being able to dine like a king.  Well, how about artisan tasting ravioli on a trailer park budget and minimal cooking knowledge.  I’m talking basic – like let your kids take care of this one.  Come to think of it, it’d be even better to use that cheap labor and get back to the garden gnome sculpting with full force.  But I digress…

This recipe leverages a few key ingredients to simplify the whole process and keep the taste profile elite.  Wonton wrappers take the place of hand-rolled pasta, and canned pumpkin replaces freshly roasted (and time-consuming) roasted butternut squash.  Topped with the simplest of sauces of butter, sage and cracked pepper, you’ve got some exemplary eating with absolutely no work.  You can even elevate the level of class with a cheap ravioli cutter (a modest $3-5) for crimped edges that make the pasta look as if they were purchased from the Italian grocer.

Once you have this filling down (which should take you all of 5 seconds) consider stirring in caramelized shallots, crisped pancetta or even gorgonzola into the mix.  Have fun, experiment and enjoy all the extra time you’ll have for the wining portion of the wining and dining.

Recipe for

Easy Pumpkin Ravioli

Ingredients
15 oz. of whole milk ricotta
1 egg
1/8 tsp. of black pepper
1/4 tsp. of white pepper
1 tbs. of olive oil
4 tbs. of puréed pumpkin
1/3 c. of parmesan cheese
pinch of nutmeg
pinch of salt
wonton wrappers
1 egg beaten with 1 tbs. of water

1 stick of butter
1 bunch of sage

Bring a large pot of heavily salted water to a boil.  In a small bowl, mix the ricotta, 1 egg, pepper, olive oil, cheese, pumpkin, nutmeg and salt.  Create a work station with a space to assemble the ravioli next to a lightly floured cookie sheet.  Take a wonton wrapper and brush the edges with egg beaten with water.  Heap a tablespoon of filling in the middle of the wrapper and then top with another wonton wrapper.  Gently press the edges together to adhere and then trim the edges with a ravioli cutter to flute the edges.  Set aside on the cookie sheet and repeat until all filling is used.

In a skillet, melt the butter until it starts to foam and turns a deep golden.  Add the sage leaves and gently cook until crisp.  Keep warm as you cook the ravioli.

Cook the ravioli in the boiling water for a quick 1-2 minutes.  Remove with a slotted spoon and immediately add to the melted butter to slick them down with the sauce.  Continue to cook the ravioli in small batches and add to the sauce.  Serve warm.

Sesame Cucumbers

I love this recipe for a multitude of reasons – in true Shakespearean style, let me count the ways…

  1. In an almost atavistic longing for my childhood, you remind me of the Pickled Broccoli Stems that I could eat in heaps and heaps at the now closed Chinese restaurant, Hsiang Foong, or as we called it, “The Foong”.  You were later replaced with El Pollo Rico, another love of mine, but I digress.
  2. PF Changs sells you for way too much money, but with a bit of change and a few minutes, I can make a far superior version of you in every way.
  3. You are so friggin’ easy to make.

Make this as a side dish for a dumpling feast, or as an appetizer for your next FU to Chinese takeout, whereby you prepare a fresh meal without all the MSG, overcooked veggies, oversauced meat and stale fortune cookies (fortune and all).  Your tummy will thank you.

Recipe for

Sesame Cucumbers

Ingredients
1 english cucumber (called seedless or hothouse)
2 tbs. of sesame oil
4 tbs. of rice wine vinegar
4 tbs. of water
1 tsp. of salt
2 tsp. of sugar
1 tsp. black sesame seeds
1 tsp. white sesame seeds
dash of chili oil (optional)

Slice your cucumber into thin, 1/4 in. rounds and place in a bowl.  Add all other ingredients and stir gently.  Let sit in the fridge for 15-20 minutes and then serve.

Fresh Tomato Salsa

There’s something to be a said for a good recipe passed on from trusted cook to trusted cook.  Finding one of these gems is truly like finding a hidden treasure – the question is whether you’ll share once you do.  Given that I’m not at all proprietary, and I love the fact that these posts get you guys cooking, eating and sharing in turn, how could I not pass it on!

This one comes from my grandmother, Vo, who was given this recipe by a friend, who in turn received it from her grandmother – the same recipe that she used back in Mexico.  Something as seemingly pedestrian as salsa becomes a celebration of the sweetness of ripe tomatoes and the piquant flavor of jalapeno.  I was surprised to learn that there’s nary the lime or bit of oil in this one – just veggies and goodness. Ricotta, Prosciutto and Fig Crostini

This one is so simple, it hardly really qualifies as a recipe.  The result, however, is no less than spectacular – the perfect amalgamation of sweet and salty, with a pleasing crunch from the toasted bread.  I first tried this combination at NYC restaurant Nizza, sister restaurant of Simon Oden baby, Marseille.  Maybe it was that I was dining with two friends that also studied in Orvieto with me, but it harkened back to those days where a simple lunch of prosciutto, pecorino, bread, honey and wine became a revelation.  The ingredients so fresh and earthy, you felt like you were tasting a bit of heaven.  Though this recipe is certainly humble in terms of preparation, it’s a reminder that it doesn’t take much to secure bliss in a bite or two.

Ricotta, Prosciutto and Fig Crostini

1/2 c. of whole milk ricotta
black pepper
pinch of white pepper
kosher salt
olive oil
a couple of slices of prosciutto
fig jam (found in nice grocery stores or online)
slices of ciabatta (9-12)

Preheat the oven to 400°.  Line the slices of ciabatta on a cookie sheet and brush with olive oil on both sides.  Sprinkle with kosher salt and freshly cracked pepper.  Bake until golden and toasty, about 10-12 minutes.  Remove from oven and let cool slightly.

In a small bowl, mix the ricotta, a pinch each of white and black pepper, a pinch of salt and a teaspoon of olive oil.  Stir well to combine.  Set aside.

Once your ciabatta has cooled, spread with a small amount of fig jam.  Spread a few tablespoons of ricotta on top to cover.  Gently place a bit of prosciutto on top, tearing each slice into smaller pieces if necessary.  Crack a bit of fresh pepper on top and drizzle with a bit of additional olive oil (use a good, fruity one for drizzling).  Serve.

Cannoli Ice Cream

This recipe was born of a request from Dennis to whip up some pistachio ice cream without the actual whole nuts in it – just smooth pistachio goodness.  As my brained churned with thoughts of embellishments and goodies to add to the ice cream, I thought, why not a cannoli?  Ricotta, chocolate, pistachios and crispy fried pieces of dough all swirled together into some frozen majesty.  Well, aside from the little bit of prep required, this one is deluxe and a sweet reminder of the Big Apple and splitting a cannoli on a date night.  Maybe if I floated a scoop in a cup of espresso for a little Affogatto action, I’d be totally authentic!

Despite its Italian leanings, this recipe is ice cream, not gelato – meaning that the richness of this dessert comes from butterfat in heavy cream rather than eggs cooked into a custard (similar to the preparation in my Basil Gelato recipe).  The result is a quicker dessert – a good thing given that the components of the ice cream take a little time.  No bother, though.  The result is well worth it.  Also, rather than mixing and rolling your own cannoli dough, I use pre-made wonton wrappers, fried and sprinkled with sugar and cinnamon.  They end up tasting a lot like a waffle cone, which is novel and genius given the ease of the wontons.


Recipe for

Cannoli Ice Cream

vegetable oil
5 wonton wrappers
powdered sugar
cinnamon

1/2 c. pistachios

2 eggs
3/4 c. of sugar
2 c. of heavy cream
15 oz. whole milk ricotta
1 c. of milk
1 tsp. of vanilla

dark chocolate, roughly chopped

In a frying pan with high sides, heat an inch of oil.  When smoking hot, drop in one or two wonton wrappers and fry until golden on both sides.  Remove to paper towels to drain and repeat until all 5 are fried.  Sprinkle with cinnamon and powdered sugar and set aside.

In a coffee grinder, add your pistachios and mix until completely ground.  Set aside.

In a standing mixer (or with an egg beater), beat eggs, sugar and vanilla until frothy and golden.  Add the heavy cream, ricotta, pistachios and milk and continue to beat until well-incorporated.

Pour the mixture into an ice cream maker and prepare according to the manufacturer’s instructions.  While the ice cream freezes, break up the wonton wrappers into small pieces and toss with the chocolate (I like to use Lindt Intensely Orange Dark Chocolate).  Place in the freezer until you are ready to mix into the ice cream.  Once the ice cream is just set, mix in the wonton pieces and chocolate and turn the mixture out into quart containers.  Chill for a while if you like your ice cream a little stiffer, or eat right away.
