Ahi Tuna Poke

Sashimi lovers, this one is for you.  The combination of meltingly tender ahi tuna with soy and sesame is a dream.  And it couldn’t be simpler to make – the key is tracking down a killer piece of tuna that is so fresh, it still wants to slap you in the face with a fin.  Ok, maybe not that fresh, but you don’t want to go cheap on this one.  The tuna is the absolute star.

This traditional Hawaiian salad is made from raw tuna and a sweet and savory sauce, sometimes with mayo for a creamy version. It typically highlights other island fave ingredients, such as seaweed, macadamia nuts or avocado. This particular version leverages Indonesian sweet soy (syrupy and thick like molasses), sesame seeds and scallions for the toothsome dressing.  You can find the sweet soy at good asian markets, but if you can’t track it down, you can substitute 1 tbs. of light soy sauce and a teaspoon of dark corn syrup.

Ahi Tuna Poke

1 lb. of ahi tuna steaks, cubed into 1/4 in. dice
1/4 c. of indonesian sweet soy sauce
1/4 c. chopped green onions
2 tbs. of sesame oil
1 tbs. of sesame seeds

Gently combine all ingredients in a bowl.  Chill and marinate for at least 2 hours before serving.
